Lime Cupcakes with Lime Buttercream Frosting
Lime Cupcakes
Makes 15 cupcakes
1 1/2 C all purpose flour, sifted
1/4 tsp baking soda
1/4 tsp salt
1/2 C (1 stick) butter, softened
1 C sugar
2 eggs
1/3 C milk
1/4 C sour cream
1 1/2 T lime zest (appx 2 limes)
1/8 C lime juice
Preheat oven to 325 degrees F and line 15 muffin cups with paper liners. In a large mixing bowl, cream together butter and sugar for 3 minutes or until very light and fluffy. Add eggs, one at a time, beating very well after each addition. In a separate bowl, whisk together flour, baking soda, and salt. Mix together milk and sour cream in another bowl. Gradually add dry ingredients to the creamed mixture, alternating with the milk/sour cream. Mix until well incorporated. Add lime zest and lime juice, mixing just until combined. Scoop batter into muffin cups to about 3/4 full. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
Lime Buttercream
(Makes about 2 cups)
1 stick of butter
2 cups of confectioner's sugar
1 teaspoon of pure vanilla extract
1 tablespoon of fresh lime juice
1/2 tablespoon of fresh lime zest
- Using a mixer, beat the butter until it is nice and fluffy.
- Add in the confectioner's sugar and vanilla, continue to mix till smooth.
- Wash the lime and using a zester, zest the whole lime.
- Mix the lime zest with the buttercream.
- Cut the lime in half and squeeze out the lime juice.
- Add the lime juice with the buttercream and mix well.

Oh yummy! So they're really lemon cupcakes with lime frosting? Either way, they look and sound so yummy! I'll definitely be giving these a try soon :)
ok they're lime cupcakes with lime frosting. i used a lemon cupcake recipe and changed the lemon to lime. guess i forgot to change it the whole way through...sorry
